Christmas pudding cupcake

Christmas and the beautiful winter are here. What better than baking delicious cute cupcakes and enjoying them with your loved ones! These cupcakes are a delightful festive bake and bring out the holiday spirit in everyone.


120g plain flour

100g golden caster sugar

140g sultanas

60g glace cherries

140g currants

100ml brandy

100ml ruby port

100g unsalted butter

140g raisins

Dash of salt

1 tsp mixed spice

2 eggs

Flavor and juice of half a lemon

1 tsp baking powder

1 tsp of gravy browning (optional)

For the topping


150g golden marzipan

150g white fondant

You will also need:

A flower cutter


Soak the dry fruits in brandy and port overnight. Do not soak the cherries.

Preheat the oven upto 200 degree centigrade or 400 degree fahrenheit and line a 12 hole muffin tray with paper cases.

For the batter- blend the butter and sugar very well till it turns light and fluffy.

Mix flour and baking powder together and add half of it to the butter and sugar mixture. Add one egg to it and beat them together until smooth. Now add the rest of the flour and the other egg and beat again.

Now add spices, lemon juice, browning, salt to the mixture and beat very well.

Cut the cherries and add them to the dry fruit which was soaked in the port and brandy. Delicately fold into the cake batter and then fill up the paper cases.

Put it in the oven and let it bake for 15 minutes and then turn down the temperature to 150 degree centigrade or 300 degree fahrenheit. Bake again for another 15 minutes. When the cake becomes springy, remove from the oven and keep it aside to cool.

Spread the white fondant to 1/8th thickness and cut 12 flowers (one for each cupcake) using flower cutter. Now spread the marzipan and cut out another set of 12 flowers. Attach the marzipan and fondant flowers together and pop onto the cooled cupcakes.

Now you can use additional cake decorations as toppings on each flowers.
