Ingredients at room temperature

Room temperature does have a crucial role to play in baking. Lets have a look at the ingredients and what happens if they achieve or fail to achieve room temperature.

Butter at room temperature

Mixing sugar and butter is one of the core tasks in creating the batter. When they are beaten together, the sugar makes tiny air pockets in the butter. Cold hard butter cannot achieve this and therefore the end result might be as light, fluffy and airy as you would wish. Butter which has come to the room temperature gets easily aerated by the sugar during creaming. Then the baking powder and/or soda enlarges those air pockets and the cake comes out light and fluffy.

For buttercream frosting too, butter at room temperature is essential and the same goes for cheese in cream cheese frosting. To attain room temperature, bring the butter out of the refrigerator at least one hour before you are going to use it.

Egg at room temperature

If your recipe calls for eggs to be at room temperature, it is imperative that you should follow the instruction rather than overlooking it. When you whisk an egg, the air bubbles gets trapped which expand while baking. Expanded air bubbles mean your cake is light and fluffy. This process of air trapping is at its best if eggs used are of room temperature. They can be beaten more easily and give a greater volume compared to eggs which are otherwise.

Also ingredients like butter, sugar etc. which are at room temperature can harden or condense if the eggs added are cold. This would create little holes in your cakes which would ruin the cake. To get eggs at room temperature keep them in warm water for 10-15 minutes. The water should not be hot, it just needs to be warm.

Room temperature of other ingredients

Majority of recipes call for most dairy items like buttermilk, milk, cream, yoghurt etc. to be at room temperature just like the butter and eggs so that the emulsification is perfect and your batter remains smooth. If a recipe mentions that butter and eggs should be at room temperature, it is implied that the other ingredients too should be at room temperature unless stated otherwise.

To get them at room temperature, you need to take them out of the refrigerator at least one hour before you start your recipe. Temperature is the backbone of baking. Always it pays great dividends to pay attention to temperature.
